Somewhere I've seen a publication that tells how, using a VOM or DVM, to
identify the individual winding and type (unipolar or bipolar) of a
stepper motor. You are clever with Google searches; I'm sure there is a
lot of such information on the Web.

You're probably out of luck. A lot of those parts have proprietary part
numbers on them, making it next to impossible to identify the actual
parts.
Don't feel bad, I've got a jillion of allkinds of unidentifiable parts.
I guess I ought to toss them all, but I always hold out hope that maybe
one day I'll identify some of them. :)

I tore down a couple of old epson printers and have not been able to 
find any data sheets for the two stepper drivers.
Anyone have or know where to find the data sheets for these two chips:
PU1501
and
STK6712AMK4B-SL
Or are these even worth messing with?
